Ingredients

    2 Tbs. canola oil
    2 onions, chopped
    1 sweet red pepper, chopped
    1 green pepper, chopped
    6 cloves garlic, peeled and chopped
    1.5 cups uncooked quinoa
    3 cups chicken broth
    2 tsp. ground cumin
    1/2 tsp. cayenne pepper
    salt and pepper to taste
    1 can corn, drained
    2 cans black beans, drained & rinsed
    1/2 cup chopped fresh cilantro (or 4 Tbs. dried)

Directions

Heat the oil in a large pot over medium heat. Stir in the onion, peppers and garlic, and saute until lightly browned.

Mix quinoa into the saucepan and cover with broth. Season with cumin, cayenne pepper, salt & pepper. Bring the mixture to a boil. Cover, reduce heat and simmer 20 minutes.

Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
