    1 and a half cup cooked white rice
    2 cups skim milk
    One third to one half cup white sugar
    1 egg, beaten
    1 tablespoon butter
    One half teaspoon vanilla extract
    One quarter teaspoon almond extract


In saucepan combine cooked rice, 2 cups skim milk, and sugar. Cook over medupium heat stirring constantly until starting to get think, about 15 minutes. Remove about 1/4 cup of liquid and allow it to cool while continuing to stir and cook the remainder. In a separtpate bowl, beat egg, and add it to the cooling milk, with a wire whisk. Add egg mixture and butter to saucepan. Stir in vanilla and almond extract. Stir till mixture is thick ( a total of 20 minutes) Pour mixture into 4 half cup containers. Spronkle the top with a little nutmeg. Cover top of pudding with a small piece of plastic wrap, plastic must touch pudding. This will prevent skim layer from forming and will make the pudding more tasty. You Amy heat warm or cool.
