    1 head of cabbage, sliced thinly
    3 carrots, sliced thin on a diagonal
    1 large onion, sliced into slivers
    3 ribs of celery, chopped
    1 cup sweet red pepper (or yellow, orange, green or mixture) chopped
    1 ounce Brazil nuts, chopped coarsely for stew
    Seasoning to your taste: mcCormick no salt seasoning, ancho peppers, herbs, turmeric, nutritional yeast are all things I've used. I have also found vegetarian no-salt flavor cubes. They are very good. You could also use vegetable stock or your own veggie juice in place of water.


Eat this as a soup, as a main dish, or puree and cook down for a sauce or dip or other dishes.


Add the items to a frying pan in the order listed. Wait about a minute for the temp to come back up before adding more ingredients. Water saute--add 1/4 - 1/2 c. water as cooking continues. When you have added the peppers, Turn down the heat, cover, and simmer 30 minutes.

Can also be cooked in a crock pot, or baked in a slow oven, covered, or steamed in a microwave steamer. Add the broth after steaming.
