    2 TBS olive oil -to sir-fry
    2 large green peppers diced
    1/2 a large onion diced
    1/4 cup fresh parsley chopped
    1 TBS minced garlic
    3 oz diced cooked chicken breast
    1 can diced Italian style tomatoes -do not drain
    1/2 cup milk
    2 TBS corn starch
    2-3 dashes of roasted red pepper and garlic seasoning


can serve over pasta or rice. Heat olive oil in a large skillet. Add green peppers, onion, parsley and minced garlic and stir-fry until veggies are tender, add cooked chicken and stir for a few minutes more then add the can of diced tomatoes and simmer. Combine milk and cornstarch in a separate dish and pour into stir-fry let simmer until sauce thickens add seasoning to taste. grated Parmesan cheese makes this tasty over spaghetti noodles.
