    3/4 cup all purpose clour
    1 tsp baking powder
    1/2 tsp salt
    1/2 tsp pumpkin pie spice
    2 beaten eggs
    1 cup lowfat ricotta cheese
    1/2 cup lowfat vanilla soymilk
    1 tbsp white sugar
    1 tsp lemon extract


in large mixing bowl combine flour, powder, salt, and spice. in a smaller bowl, combine eggs, ricotta, milk, sugar, extract. fold into dry ingredients until just moistened. spoon by 1/2 cup into a skillet and cook a few minutes on each side, until golden. serve immediately, with syrup. makes 4 large pancakes.

  • If you use an egg substitute, whole wheat flour and splenda instead of sugar it would greatly reduce the calories, fat, cholesterol and probably the carbs too. - 3/6/08
