Ingredients

    1 1/2 cups raw almonds, whole
    1 tsp corn oil
    1 tbsp vanilla extract
    1/4 cup cocoa powder (mix of 2 tbsp regular cocoa and 1 tbsp dutch process adds more chocolate flavor)
    1/8 tsp fine grain salt
    1/8 tsp cayenne pepper
    1 tbsp confectioner's sugar

Directions

Mix cocoa powder, salt, cayenne, and powdered sugar in large bowl.
Heat oven to 325 deg F.
Heat a small saute pan with oil, then toss almonds to coat. Add vanilla and toss (be aware, contents may steam). When vanilla has evaporated, move almonds to cocoa powder mixture and toss to fully coat. Move the almonds without agitating the leftover cocoa powder that remains in the bowl onto a baking sheet and bake for 7-8 minutes. Let cool on sheet and serve.
