Beet & Pears in a Micro Salad

3 cups fresh spinach
1 cup purple or red sweet onion
1 cup broccoli, alfalfa, or mung bean sprouts, or a mixture
1 large pear, cored and bite-size chopped
2 beets, roasted or boiled without salt, bite-sized chopped
1 cup white beans, low sodium, rinsed and drained
1/4 cup Raspberry blush vinegar or other fruity vinegar of your choice
Note: apple can be substituted for the pear, but a firm, ripe pear is delicious in this salad.
If you are eating cheese, this salad is delicious with Wensleydale Cheese with Cranberries.
If you are not eating a side with fat, like almond butter on an English Muffin, add coconut oil or olive oil to the vinegar so you have fat in the meal to aid digestion of the spinach, allowing release of vitamin C and iron.
Bite-size chop pears and beets.
Mix all ingredients. Divide into 2 main dish servings. Enjoy.
Serving Size: Makes 2 large servings of about 2.5 cups each
