    2 lg Chicken Breast, Boneless Skinless (about 18 oz) - cut into bite size pieces
    1 Tbsp Olive Oil
    1 Med. Green Bell Pepper
    1 med Yellow Onion
    4 cloves Garlic
    1 tsp dried Oregano
    1.5 tsp dried Basil
    1 tsp Salt
    1 tsp Black Pepper
    1 Cup Cherry or small Vine-ripe Tomatoes


Heat frying pan with 1 tsp olive oil, stir in chicken, sprinkle with 1/2 tsp salt, pepper, oregano, and basil, then add a splash of water and cover for 5 minutes. Lift cover, and flip each piece of chicken, re-cover and cook for another 5 minutes. Remove chicken from pan and add 2 tsp olive oil, chopped bell pepper, wedges of onion, and sliced garlic. Saute until tender crisp. Stir in chicken, remaining salt, basil, oregano, and halved or wedged tomatoes. Continue to saute for a few minutes, and serve with couscous or quinoa.

Serving Size: Makes 4 - 3/4 cup servings
