Introduction

Ingredients

    Raw medium potato,
    1 cup raw chopped carrot (see photograph)
    50g raw swede
    350 mL cold water
    A pinch of dried (or fresh) thyme
    A few twists of freshly ground black pepper - or just a dash of pre-ground to taste
    3g grated cheddar cheese

Tips

The swede will take slightly longer to cook than the potato, test that rather than the other vegetables.


Directions

This is so easy. Cut the potatoes, carrots and swede into chunks. Add the preciously cooked onion, cold water and a sprinkling of herbs. I like the flavour of thyme, but you can change or add something else if you wish. Bring to the boil and simmer until cooked. It won't take long.

Now use a potato masher to break up the pieces. Sometimes I leave it like this, sometimes I whizz it in the blender to make it smooth - variety is the spice of life ;)

To serve - add half the grated cheddar cheese to the bottom of each serving bowl and add the soup. The cheese will melt giving a marbled appearance and adding just a little flavour.

Serving Size: Makes two bowlfuls.
