2 C Brown rice
1 - 2 Bay leaves whole
2 tbsp Canola oil
1 tbsp lime juice
1 tsp coarse sea salt
2 tbsp chopped cilantro
While this recipe appears long to make the effort is all in the steaming/cooking of the brown rice. I let my steamer do the work while I make the rest of dinner.
This is a work in progress, there may be reductions in oil as I move forward. I usually prepare more than this at one time but thought I'd cut the portion for anyone who doesn't want to feed an Army. The fam loves it, I make it every week.
Remove Bay Leaf. Add oil, lime juice, sea salt and cilantro to taste.
Serving Size: makes 4 1/2 cup servings
