    5 large eggs
    27 tbsps egg substitute (egg beaters)
    1/2 bell pepper
    1 cup chopped asparagus
    1 cup chopped zucchini
    1 cup chopped mushrooms
    1 cup chopped tomatoes
    4 tbsps goat cheese crumbles
    salt and pepper to taste


excellent made ahead for a few days of breakfasts or snacks.


mix eggs and egg substitute in a bowl add all chopped veggies and goat cheese...pour into 12 cup muffin tin (greased). Bake at 350 for 25 minutes. let cool and Enjoy...
