    2 La Tortilla Factory, Whole Wheat Low Carb Tortillas
    2 large Egg, fresh, whole
    6 tbsp Great Value 100% Liquid Egg Whites
    1 tbsp Cilantro, chopped
    Mrs Dash (Garlic and Herb and/or Lemon Pepper)

    6 oz Cooked Shrimp, Tail Off
    1/8 small red onion, sliced thin
    6 spear, Asparagus, fresh, small (5" long or less) - tough part removed
    1/4 cup Yellow Squash and Green Zucchini, sliced small
    1/4 cup Baby Bella Mushrooms (Crimini), sliced
    1/4 cup Broccoli/Cauliflower Mix, raw/fresh, chopped
    5 Carrots - Boathouse Farms Baby Cut Carrots, cut into strips or slices
    1 Scallion or Spring/Green Onion (medium (4-1/8" long), chopped thin
    Mrs Dash (Garlic and Herb and/or Lemon Pepper)


They served it with no sauces, cheeses, etc. so I have not included any. Some may want to add a light white cheese sauce or maybe a light cream sauce with lemon. My one son pours salsa on his.


Chop all veggies to bite-sized pieces. Quickly stir fry all veggies for the filling until done to preferred crispness.
Sautee onion to caramelize slightly then add shrimp. Sear the shrimp in the onions and add Mrs Dash (Garlic and Herb and/or Lemon Pepper).
Add onions and shrimp to the veggies and let sit all mixed together while you prepare the wrap part.

Combine eggs and egg whites. Add cilantro and Mrs Dash (Garlic and Herb and/or Lemon Pepper). Pour half into a small skillet. Let egg mixture partly set then place 1 tortilla into the top of the eggs so they "become one". Turn so the tortilla is directly on the skillet surface until tortilla starts to puff.
Repeat with 2nd half of egg mix and 2nd tortilla.

Pour half of the filling onto the tortilla side of the wrap, fold up the bottom edge, then roll to make burrito.

Serve and enjoy.
