    1 1/4 cups Bob's Red Mill 100% Whole grain 10 Grain hot cereal
    1/4 cup old fashioned oatmeal
    2 1/2 cups boiling water
    1/4 cup honey
    1/4 cup oil
    2 pkgs yeast
    1/3 cup water (100 - 110 degrees)
    1/4 tsp sugar
    1 Tbsp salt
    1 1/2 cups whole wheat flour
    3 cups all purpose flour (not bread flour)
    1/2 cup oatmeal


Place 10-grain hot cereal and 1/4 cup of oatmeal in mixing bowl. Pour boiling water over cereals. Let stand for one hour. Add yeast and sugar to warm water and let stand for 5 minutes (until foamy). To the cooled oats add yeast mixture, salt, honey, oil and whole wheat flour. Stir to combine.

Add all purpose flour (1/2 cup at a time) until dough forms. Continue adding flour and knead 5 - 8 minutes until dough clears side of bowl and dough forms smooth round ball. Place dough in oiled bowl. Cover with plastic wrap and towel. Let rise until double in size ( about 40 minutes.

Punch down. Shape into two loaves. Place in lightly oiled loaf pans. Cover agin with plastic wrap and towel. Let rise a second time until double in size (about 45 minutes). Bake in preheated oven (375 degrees) for 50 minutes. Bread is done when it sounds hollow when tapped with a wooden spoon.
