Ingredients

    1 Red Bell Pepper - sliced
    3 medium slices red onion
    1 cup fresh spinach - chopped
    4 lg eggs


Tips

This is a great tasting meal that is high in protein - 9g per serving or 36 per entire meal.


Directions

Slice the bell pepper and onion - place them in a skillet over medium heat to sautee - no oil is necessary b/c of the water in the pepper.
cut the spinach up - I use kitchen shears
place spinach into a bowl - crack the eggs into the bowl with the spinach. Mix thoroughly

When the vegetables are soft enough for your taste, cover them with the egg and spinach mixture.
Place a well-fitting lid over the skillet, and turn the heat down to low-med. You don't want to cook it too fast or the bottom will be too done.
Once the top of the eggs are done - no longer wet - the dish is complete. Remove the skillet from the heat and add the cheese - I just tear pieces and place them over the top. Once the cheese is melted you cut the fritatta like a pizza and serve. It will make 4 servings.
