    1 cup raw cashews, soaked for 2 hours and rinsed
    3 cups water
    3 individual packets of Splenda
    1 tablespoon vanilla extract
    Pinch salt
    1/2 cup chia seeds

    Topping - 1/2 cup raspberries


1. Blend all ingredients except chia seeds and topping in a blender until smooth. Add chia seeds and blend lightly. Pour into a large bowl and refrigerate overnight.
2. Serve topped with 1/2 cup raspberries per serving

Serving Size: makes 8 servings of 1/2 cup each
