    2 medium onions, finely chopped
    150g/6oz celery, trimmed and finely chopped
    200g/8oz carrots,peeled and finely chopped
    Olive or Rice Bran Oil for frying
    100g/4oz Red Lentils
    1200mls water
    4 tsp vegetable stock powder


Fry the onion, celery and carrot in a little oil for approx. 10 minutes until tender. Add the lentils and poor over the water and stock. Simmer covered, for 20 min. Puree with a blender. (I personally like to blend 2/3rds and keep 1/3 still chunky and then mix together, so you've still got a bit of texture).
