Introduction

Ingredients

    1 cup Splenda
    1 stick softened butter
    2 eggs
    1 1/2 cups all purpose flour
    1 teaspoon baking SODA
    1 teaspoon salt
    1 cup mashed, very ripe bananas
    1/2 cup reduced fat sour cream
    2 teaspoons pure vanilla extract

Tips

Add 1/2 cup of chopped pecans or walnuts and opt out the blueberries for a yummy alternative.


Directions

1.Preheat oven to 350 degrees Fahrenheit
2. Grease and flour a 9"x 5" loaf pan.
3. Mix butter and sweetener until creamy.
4. Add eggs and beat well.
5. Sift dry ingredients together and combine with butter/sugar mixture
6. Add bananas, sour cream and vanilla; stir well
7. Pour into a prepared pan.
8. Bake 1 hour and test with toothpick to be sure it comes out clean.
9.Turn out onto a rack and cool.

Serving Size: Makes 1 loaf or 12 slices
