Introduction

Savory soup that even picky eaters like! Savory soup that even picky eaters like!
Number of Servings: 8

Ingredients

    2 lbs or 4 cups sliced yellow summer squash
    1 medium onion, chopped
    2 Tbsp salted butter
    4 cups water
    1 cup heavy whipping cream
    1 tsp salt
    1 tsp garlic powder
    Chives (garnish)

Directions

Add butter to large pot and melt over medium heat. Add onion and cook about five minutes until soft. Add squash and water, mixing well. Reduce heat to medium low, and simmer for about twenty minutes until squash is very tender. Next, either blend in batches or blend using a immersion blender. Add heavy whipping cream, salt, and garlic powder, then stir slowly to mix. Serve immediately garnished with chives.

Serving Size: Makes approx. 8 1 cup servings
