Ingredients

    1 onion chopped
    1 red bell pepper chopped
    2 jalapenos chopped
    1 garlic clove chopped
    1 cup white kidney beans drained and rinsed
    1 package Trader Joe's Soy Chorizo
    1 can Rotel tomatoes with green chilies (drained)
    Cilantro to taste
    1/2 cup shredded cheese
    5 to 6 medium sized zucchinis cut in half and part of insides scooped out

Tips

I add hot sauce on top when it was finished also. 1 serving and I was FULL. Super quick and easy to make.


Directions

Cook onion, red pepper, garlic and jalapenos until tender in pan. Add in cilantro if you like. Add beans, chorizo and rotel. Warm through. Oven should be heated to 350 degrees. Place zucchini in baking dish. Scoop ingredients into the scooped out zucchini. (I just dumped the mixture on top of them) Grate cheese over top. Pop in oven and cook 30 minutes.
