Ingredients

    Watermelon, 1/4 (6 lb melon)
    3 Navel Orange - medium (peeled and sliced with seeds removed)
    1/4 Red Onions, raw, sliced thin
    Cheese, President Fat Free Feta, 2 oz
    1/4 cup chopped Parsley
    2 Tbs. chopped fresh mint
    2 tsp Extra Virgin Olive Oil
    3 Tbsp Balsamic Vinegar
    Pepper, black, 1 dash
    Salt, 1 dash

Directions

Slice watermelon into small chunks. Peel oranges and cut out fleshy sections, squeeze juice out of remaining flesh into salad. Slice red onion very thin. Dice up feta into small chunks. Add chopped mint, parsley, Olive Oil, Vinegar, and Salt and Pepper. Stir and serve immediately.

Serving Size: 1/4 of salad
