I don't even like bananas, but I like these! An incredibly quick and easy healthy breakfast. I don't even like bananas, but I like these! An incredibly quick and easy healthy breakfast.
Number of Servings: 2


    1 medium ripe banana, mashed
    1 large egg
    2 tablespoons semi-sweet chocolate chips
    Dash of cinnamon, optional


These are a little tricky to flip so be sure to let them cook thoroughly on one side first.

If you want to save on calories, the chocolate chips can be left out, but I like the decadent flavor of the chocolate with the banana!


Mash banana very thoroughly. Add egg and beat until smooth. Add chocolate chips and a dash of cinnamon, if desired.

Pour into greased skillet or onto griddle and cook until lightly browned. Flip and repeat.

Makes two large pancakes.

Serving Size: 1 pancake.

    I'm back! :O) These were tasty even without the chocolate chips. Like you said, they were tough to flip and didn't stick together. Next time I make them, I'm going to add just a little bit of oat flour to help them stick together.
