    1 Tbsp olive oil
    1 medium onion, chopped
    1 Tbsp minced garlic
    2 cups chicken broth
    1 cup dry quinoa
    10 oz kale, chopped
    3 sweet potatoes, peeled and cubed
    1 tsp cajun seasoning
    0.5 tsp salt
    1 tsp black pepper
    1 tsp ground cumin
    1 tsp paprika


I used spicy olive oil for an extra kick.


Spray oven-safe pan with cooking spray. Arrange cubed sweet potatoes in single layer. Spray with cooking spray and sprinkle cajun seasoning. Bake at 350 for 20 - 25 minutes (until cubes are soft in the centers).
Cook quinoa in chicken broth according to instructions on package.
Heat olive oil in a pan. Add onions and garlic. Saute until onions are translucent. Add kale and cook until wilted. Add sweet potatoes, quinoa, salt, pepper, cumin, and paprika. Mix. Makes 11 1-cup servings.
