Number of Servings: 12


    7 oz. ham
    1 tsp olive oil
    8 oz. mushrooms
    1/4 c. sliced scallions
    1/4 c. shredded swiss cheese
    1 tsp. freshly ground pepper
    5 eggs
    3 egg whites
    1 cup 1% milk


Individually wrap in plastic wrap and refrigerate up to 3 days or freeze up to 1 month. To reheat, remove plastic, wrap in paper towel and microwave on high for 30 to 60 seconds.


1. Preheat oven to 325.
2. Spray muffin tin with cooking spray
3. Cook mushrooms. Let cool and add scallions, swiss cheese, ground pepper.
4. Whisk eggs, egg whites and milk. Divide egg mixture amongst muffin cups (about 1/4 c each muffin cup)
5. Add ham mixture to each cup (about 2 T)
6. Bake until tops are beginning to brown, about 25 minutes.
7. Cool on wire rack for 5 minutes. Place a rack on top of the pan, flip it over and turn the quiches out onto rack. Turn upright and let cool completely.
