Ingredients

2-1/2 cup cooked pinto beans
3 ounces silken tofu
1 Tbsp Mrs. Dash Southwestern Chipotle seasoning
Dash of salt
4 ounces almond milk, original (NOT vanilla flavored)
Tips
Don't use canned beans because it won't taste the same. Canned beans are loaded with sodium and they taste tinny. If cooking your beans from scratch seems "putsy," cook a whole bag (2 lbs. dry) of beans at one time, then freeze them in 1 cup bags. That way you can pull them out of the freezer and reheat whenever you need them!
Directions
Cook beans according to package instructions. Cool in fridge until at least room temperature.
Measure out 2-1/2 cups cooked beans. Set aside 1/2 cup of beans.
Take 2 cups beans and the remainder of ingredients and place in blender. Blend until quite smooth. Add remaining 1/2 cup of beans to blender and lightly "chop" them in the blender so that they are mixed in but still chunky. This gives the dip a chunky texture. Serve with a side of salsa, sliced avocado and tortilla chips. Low fat and high in fiber!
