    1.25 lbs of ground chicken
    10 oz. baby bella mushrooms
    1/4 c. parsley
    1/2 c onion
    3 cloves garlic, crushed
    1/2 tea salt
    2 tbsp ground organic flaxseed
    1/2 c oats
    1 large egg
    4 medium sweet red peppers
    3 tbsp parmesian cheese


Run mushrooms, parsley, onion and garlic through food processer. Add all ingredients down to peppers and mix together. Cut the peppers in half lengthwise and stuff with mixture. Bake at 350* for 55 mins. and then top with parmesian cheese. Bake 5 mins more.
Makes 8 servings.
