Introduction

Number of Servings: 6

Ingredients

    Egg, fresh, whole, raw, 2 large
    Butter, salted, 2 tbsp
    Buttermilk, lowfat, 3/4 cup
    *All Purpose Unbleached Flour, 3/4 cup
    Baking Soda, 3/8 tsp
    Granulated Sugar, 1 tsp
    Baking Powder, 1 Tbs
    Kretschmer Wheat Germ 1 Tbsp

Directions

Separate eggs. Combine egg yolks with buttermilk and sugar (sugar is just to help browning, may leave out if desired) and set aside.
Mix dry ingredients together
Whip egg whites until stiff peaks form
Combine milk mixture with dry ingredients and let sit 1 minute, batter will begin to rise rapidly
Fold beaten egg whites gently into batter, being careful not to collapse the mixture.
Spoon into waffle maker according to the directions for the machine. Makes approximately 3 servings in a mini-waffle maker that has two 4-inch squares. Serving information is per square.
