A great alternative to fast-food French fries, and wonderful as a TV snack or after school! A great alternative to fast-food French fries, and wonderful as a TV snack or after school!
Number of Servings: 4


    2 lbs green beans
    1 tablespoon olive oil
    1 teaspoon kosher salt
    1/2 teaspoon fresh ground pepper


Preheat oven to 400°F.
Wash, dry well, and trim green beans.
Put green beans on a baking sheet, and drizzle with olive oil (alternately, use an olive-oil spray).
Sprinkle with salt and pepper to taste.
Ensure all the beans are evenly coated, and spread them out into 1 layer.
Roast for 20-25 minutes, stirring the beans after 15 minutes, until beans are fairly brown in spots and somewhat shriveled.
Serve hot or at room temperature.

  • These were very good. Both my sons loved these and the oldest is very picky when it comes to veggies. Hubby said they were different. A definite "Do again"!! Thanks! (I added some minced garlic to mine) - 5/24/08

  • I never eat veggies, even though a wise person once said that you can like just about anything depending on how it's made. So I gave this a shot, and I actually found myself eating green beans and not hating them! Even my son didn't put up to much of a fuss. For me this is a miracle. Thanks a bunch. - 4/25/08
