    1 eggplant (approx 1.25 lbs)
    1/8-1/4 cup wheat flour
    1/4 cup eggbeaters (may need a little more)
    1/2 cup plain bread crumbs
    1 cup fat free mozzarella cheese
    1 cup spaghetti sauce


Cut eggplant into 1/4-1/2 inch slices. Dip each slice into flour, then egg, then bread crumbs. Arrange onto shallow baking pan. Bake 20 minutes at 350 degrees. Top with cheese and spaghetti sauce. Serve over whole wheat spaghetti noodles. (nutrition info includes all except spaghetti noodles) One serving equals one slice of eggplant.
