    1 bag of boil in bag brown rice
    3 T Smart Balance
    1.5 T minced garlic
    1/4 onion - finely diced
    1 zucchini, chopped
    1 package white mushrooms, chopped
    1 can Healthy Request - Low Sodium, Low Fat Cream of Mushroom Soup
    1 can Beef Consomme' soup


Follow instructions to boil brown rice. Drain & set aside.

Melt butter in large pot. Add in garlic & saute for a couple of minutes. Add in vegetables & continue to saute until the rice is finished. Add in the soups & simmer for a couple of minutes. Stir in rice.

Spray dish with cooking spray. Preheat oven to 400 degrees. Cook for 40 minutes or until no longer "soupy."
