Ingredients

2 tablespoons light soy sauce
1/8 teaspoon toasted sesame oil
2 tablespoons apple cider vinegar
1 clove garlic, minced
1 package (16 ounces firm tofu, drained and cut into cubes or cutlets
10 cups fresh spinach
2 teaspoons extra-virgin olive oil
1 clove garlic, sliced into thin strips
Directions
In 7 or 8 inch baking dish, place the soy sauce. Sesame oil, vinegar and minced garlic. Add the tofu. Marinate for 1 hour, turning the tofu once to expose all sides to the marinade.
Preheat the oven to 350 degrees. Drain the excess marinade from the tofu and discard. Bake the tofu for approximately 30 minutes.
Meanwhile, wash, drain, and chop the spinach into 1 inch strips. (If using baby spinach, leave it in whole leaves.) Pat time spinach dry with a paper towel.
In an 8 inch skillet, heat the olive oil over medium heat. Add time sliced garlic and sauté just enough to sweat time garlic. (Do not brown.) Add the spinach. Cook for about 4 to 6 minutes, stirring often, until the spinach is tender. Place the spinach on a serving plate and top with the tofu.
