Ingredients

    2 cups Pamela's Ultimate Baking and Pancake Mix (gluten-free)
    1/3 cup steel cut oats
    1 egg (or 2 egg whites)
    .25 cup unsweetened applesauce (can use a single serving from a 6 pk)
    1 cup Splenda Sugar Blend for Baking
    1/2 cup water
    Lemon extract - 3 lidfulls
    Vanilla extract - 1 lidfull
    12 paper cupcake liners
    muffin pan

Directions

Set oven at 350 degrees.

Mix flour, oats, egg, applesauce, splenda, water, and extracts until smooth. Add a few spoonfuls of water until it mixes smoothly, if necessary.

Scoop into 12 cupcake liners in a muffin pan and bake for 20 minutes.
