    1 cup fresh pineapple
    5 Roma tomatoes
    1/2 cup chopped red onion
    1/2 cup chopped red pepper
    juice of 2 limes


Roasting the pineapple and tomatoes brings out the sweetness but isn't necessary if you are in a hurry.


Preheat oven to 350. Cover baking sheet with parchment Spread cut up pineapple and tomato slices on tray. Bake about 30 minutes until roasted. Let cool. Mix pineapple, tomatoes, onion, peppers and juice of limes together. Let stand in refrigerator for a couple hours to meld flavors.
