Introduction

I use a pressure cooker to speed up the cooking time. I use a pressure cooker to speed up the cooking time.
Number of Servings: 6

Ingredients

    4 cups water
    2 large bay leaves
    3 1/2 lb. corned beef brisket
    5 medium size potatoes
    5 carrots, cleaned and cut in half
    2 lbs. green cabbage, quartered

Directions

Pour water into the pressure cooker. Add bay leaves and brisket along with the seasoning packet.

Lock lid and bring up to pressure using high heat. Turn heat down and begin timing for 60 min.

Remove from heat and allow pressure to drop naturally.

Remove lid. Check for doneness of meat. It should shred easily, if not cook again with the cabbage and carrots.

Place the carrots and quartered cabbage into cooker. Bring up to pressure, reduce heat and cook for 3 minutes longer. Quick-release the pressure.

Remove vegetables from pot and place on a platter. Slice the meat and arrange on the platter for serving.

Serve with your choice of mustard or horseradish sauce. Serves 6

I omitted potatoes to decrease the calories, but if you like add whole scrubbed potatoes with the meat, but calculate the extra calories.
