Ingredients

100g/3.5oz lamb's liver, diced
100g/3.5oz button mushrooms
50g/2oz cougette/zucchini, diced
50g/2oz green beans
45g/1.5oz SCD yoghurt made with 50% double/heavy cream
80ml (1/3 cup) cloudy apple juice
160ml (2/3 cup) water
1tbsp olive oil
0.5 tbsp fresh mint (or 0.5 tsp dried)
dash of black pepper
dash of salt
Directions
Heat the oil in a pan and add the liver. Toss until sealed.
Add mushrooms, courgetter/zucchini, apple juice and water. Add seasonings. Bring to the boil then cover and simmer gently for 10 minutes.
Add green beans, cover and simmer for 5 minutes.
Remove cover and allow sauce to reduce slightly. Add yoghurt and mix into remaining liquid. Bing back to the boil and reduce until sauce starts to thicken.
