    2 Chicken breast sliced into strips
    1 green pepper diced
    1 cup onion diced
    1 tbsp olive oil
    1 can diced tomatoes
    1 can rotel tomatoes with chilis
    2 tsp cajun seasoning
    1 tbsp fresh basil or 1 tsp dried
    1 tbsp fresh parsley or 1 tsp dried
    red pepper flakes (depending on how hot, I use about 1 Tbsp but you may want more or less)


Heat olive oil over medium high heat.
Saute onion and pepper for about 1 minute.
Add chicken and cajun seasoning and stir fry until no longer pink.
Add your tomatoes, basil, parsley, and red pepper flakes.
Reduce heat to medium and cook about 15 minutes.
Serve over rice or noodles.
