    4 large green bell peppers
    2 c. sliced zucchini
    2 c. sliced fresh mushrooms
    6 oz. sliced carrots
    1 small onion, cut in large chunks
    1 T. crushed garlic
    1/2 lb. ground beef
    1/2 can (2 c) Hunts garlic and onion spaghetti sauce


You can use any combination of vegies to stuff peppers!


Preheat oven to 350 degrees. In 8 x 8 glass baking dish, spread 1/2 c. spaghetti sauce on bottom. Set aside.

Cut tops off of bell peppers. Clean out seeds. Place on microwave safe plate and fill each about half full of water. Microwave on high for 5 minutes. Remove from microwave and let cool. Pour out and dispose water when manageable.

In a large skillet, brown ground beef, onions, and garlic. When meat is almost done, add zucchini and carrots. Simmer about 15 min. Add mushrooms and 1-1/2 cups spaghetti sauce. Stir well, heat through, about 5 min.

Place peppers in prepared baking dish. With large spoon, stuff each pepper with meat/veggie mixture.

Bake at 350 deg. for 30 min.
