Ingredients

6 poblano peppers
1 pound 90/10 ground beef
1 package fatfree cream cheese
1/2 cup green onions
spices to taste (cumin, garlic, chipotle, etc.)
shredded pepper jack cheese to cover top
Directions
Broil peppers until blisters appear with hints of black. Rotate to blister all sides. Place peppers in a gallon size zip top bag and steam for about 5 minutes. Use your finger tips to peel peppers. Running under cool water will make this easier.
Brown ground beef with spices. Drain beef and combine in a separate bowl with cream cheese and onions.
Make a slit in peppers and stuff each with the beef mixture. Place peppers in pan. Top with shredded pepper jack. Place under broiler for about 5 minutes, until cheese has bubbled and begun to turn a beautiful toasty brown color.
Serving Size: 1 pepper with cheese topping
