1 lamb shank weighing about 400g/14oz
300ml/1.25 cups stock
150g carrots, peeled & sliced
100g mushrooms, chopped
1 tbsp fresh mint or 1 tsp dried
salt & pepper to taste
Tips
Vary the vegetables with whatever SCD legal veg you fancy.
Directions
Preheat the slow cooker. Heat the stock and add to slow cooker along with lamb shank,carrots and mushrooms.
Season to taste. Cover and leave to cook for 8 hours or overnight.
