    2 Med Baking Potato, Idaho potatoes or other potatoes well scrubbed
    2 Tablespoons Plain Low-fat Yogurt
    Sea Salt
    Fresh Ground Black Pepper
    2 Tablespoons Chives


Rub Potato with olive oil and shake on coarse salt. Wrap in aluminum foil. OR
Heat oven to 450°F. Scrub potatoes clean and remove eyes. Space apart on oven rack and bake for 1 hour. Medium and small potatoes take 50 and 40 minutes respectively.
Cut potatoes open and season to taste, or try one of the other standard toppings: lowfat yogurt/ sour cream and chives.
