    2.5 large zucchinis
    1 medium onion
    3 links italian chicken sausage, casing removed
    1/2 cup chopped mushrooms
    1 cup frozen spinach
    5 cloves garlic
    1 cup marinara sauce
    1 cup italian cheese blend


1. Preheat oven to 350. Halve the zucchinis and scoop out a bit of the insides with a spoon.
2. In a medium skillet, heat olive oil. Saute sausage, onion, mushrooms, spinach and garlic until sausage is cooked and veggies are soft. Add sauce and mix well.
3. Spoon sausage mixture into zucchini halves. Top with cheese.
4. Bake until cheese is melted and zucchinis get slightly soft, about 20 minutes.
