    2 cups boiled beets
    3 eggs
    1/3 cup maple syrup
    1/2 vanilla bean seeds
    2 tsp vanilla
    3/4 cup butter

    1 cup almond flour
    1/4 cup ground flaxseed
    1/4 cup arrowroot flour
    1 tsp baking soda
    3/4 tsp salt
    9 Tbsp cocoa (1/2 cup + 1 tbsp)


It is a moist cake but the knife should come out clean when done baking.


Boil beets until tender (make extra and freeze for next time).

Blend cooled beets, eggs and maple syrup together in a blender. Pour into a large bowl and add butter, vanilla bean seeds and vanilla.

In a separate bowl mix all the dry ingredients together well. Add dry ingredients to the wet stirring well. Pour into a greased 9x12 inch pan baking at 350* for 25-30 minutes.

Serving Size: Makes 12 pieces.
