Introduction

I make this for myself as a low-carb option when I am making traditional spaghetti for my family! The long, thin shreds of cabbage and onions do a decent job of mimicking spaghetti noodles! Ingredients

    1 small head of cabbage, shredded
    1 small onion, cut in thin rings then rings cut in 1/2
    1 cup green pepper, cut in thin strips
    1 Italian sausage link, taken out of casing, crumbled and cooked
    1 c. Marinara pasta sauce
    2 tsp. basil
    2 tsp. minced garlic
    2 Tbsp. grated Parmesan cheese
    1/4 c. of shredded mozzarella cheese

Tips

You can add salt, but with the saltiness of the meat and the cheeses, I found that it really didn't need any! Serve with a nice side salad and enjoy!!


Directions

1-Pour Olive Oil in skillet
2-Remove casing from sausage link and crumble into skillet and cook through.
3-While meat is cooking, prepare the veggies by shredding the cabbage and slicing the onion and peppers
3-When meat is cooked thoroughly, removed to a paper towel lined dish to drain.
4-Add onions and peppers to skillet that the meat had cooked in.
5-Add minced garlic and sautee' until onions are opaque and peppers are tender.
6-Add in shredded cabbage and continue cooking until cabbage starts to wilt.
7-Add basil, marinara and meat to the veggies and combine.
8-Continue cooking until sauce is heated through.
9-Add shredded mozzarella, stir and move to serving dish immediately.
10-Top with Parmesan cheese and enjoy
