    2 tbsp olive oil
    1 lb cubed chicken breast
    4 carrots, peeled and sliced
    5 celery hearts, diced
    2 leeks, thinly sliced
    half an onion, chopped
    about 6 cremini mushrooms, chopped
    2 boxes chicken stock
    about 24 oz fresh gnocchi
    salt, pepper, and parsley to taste


heat the oil in the pan. Cook the carrots, onion, celery, leeks, and garlic until tender. Add the chicken stock and bring to a boil. Add the chicken and cook until no longer pink. Add the gnocchi and mushrooms and cook an additional 3 minutes. Season with salt, pepper, and parsley to taste.
