Ingredients

1lb 80/20 Ground Chuck
1 can (10oz) Old El Pado Refried Beans - Fat Free
1/2 cup Pace Medium Picante Sauce
1 jar Kroger Chipotle Enchilada Sauce
2 cups Kroger Shredded 2% Mexican Style Cheese blend
8 corn tortillas
(optional toppings - not included in nutrition: Sour Cream, Sliced Black Olives, Cilantro, Green Onion)
Directions
Brown ground beef in nonstick pan, while that's browning, mix salsa & refried beans in a large bowl & microwave to warm through, drain fat from cooked beef.
Pre heat oven to 350, while that's heating up pour a little enchilada sauce in the bottom of oval casserole dish (mine is about 9x13x2), place a tortilla in the bottom & use it to smoosh the sauce around the dish (this will help the food not stick to the dish) slide that tortilla to one side of the dish & place another in next to it (they may overlap a bit, it's OK) spoon 1/3 of the beef on top, then spoon 1/3 of the bean mix on that, then sprinkle on 1/2 cup of cheese, then pour about 1/4 of the remaining enchilada sauce over that. Tortillas, Beef, Beans, Cheese, Sauce again. Tortillas, Beef, Beans, Cheese, Sauce once more. Lastly, Tortilla, Sauce, then Cheese!
Bake for about 15 minutes, just to heat it all up again & melt the cheese on top.
Serving Size: Makes a large casserole, plenty for 8!
