This yummy summer salad is easy to make and is gluten free. This yummy summer salad is easy to make and is gluten free.
Number of Servings: 8


    1 Can garbanzo beans (chick peas) drained, rinsed
    1 Cucumber peeled, chopped into quarters
    1/2 C. Cherry Tomatoes, halved
    1/4 C. olive oil
    3 TBS Apple CIder Vinegar
    Basil to taste


Combine garbonzo beans, chopped cucumber and chopped tomatoes in a large bowl.

Combine olive oil, apple cider vinegar and basic in another bowl to make a dressing.

Toss vegetables/beans in the dressing. Refrigerate.

Serving Size: Makes about 8 1/2 servings
