    1 Six oz chicken breast, diced
    1 Large can of diced tomatoes, about 3 cups
    1 Large red onion
    3 Cloves of garlic
    salt and pepper to taste
    herbs to taste


dice onion and garlic.

divide tomatoes in two, and puree one half, setting the other aside.

heat a large sauce pan over high flame, and spray in some cooking spray. add onions and a pinch of salt to sweat. cook, stirring, for a minute or so, then add the garlic. sautee until onions are slightly translucent, then add the diced chicken breast. cook until just done, then add in the pureed tomatoes. stir until reduced by a quarter, then add in the remaining diced tomatoes. stir to combine, and serve.

pour over your favorite pasta and top with a bit of parmesan cheese.
