Ingredients

    2 chicken breast no skin, no bone, cut in bite size
    1/2 cup barley, uncooked
    1/2 tsp ground thyme, or 1 tsp dry thyme, or 1 tbsp fresh thyme (adjust to taste)
    2 tbsp dry parsley or 4 tbsp fresh (adjust to taste)
    2 cups carrots, sliced or diced
    2 cups celery, sliced or diced
    1 medium onion diced


Directions

In a large pot heat water and add washed chicken pieces.
Let boil 5 min, or until you can skim the soup.
Skim it and add celery , carrots and onion.
Let boil for 5 min.
Add 1 tbsp salt, start with 1 tsp and increase if needed to taste.
Let boil for another 5 min.
Add thyme and parsley and after another minute or so, add barley.
Do not add more than 1/2 cup. The soup will become cloudy and thicken a little.
Let simmer another 20- 30 minutes or until the barley is cooked to your taste. (I like it a little chewy).
Add pepper to taste and serve.
