Introduction
My Mom's salmon patty recipe... My Mom's salmon patty recipe...Number of Servings: 8
Ingredients

4-60 oz cans of salmon
3 eggs, beaten
3 Tbsp of Mayonaise (light if possible)
1 cup corn chips, crushed
2 Tbsp onion, finely chopped or minced
1 tbsp dill weed
1 oz lemon juice (about 2 tbsp)
Tips
Great served with rice, and a vegetable!
Directions
Crush 1 cup of corn chips, set aside
Drain cans of salmon and put in medium mixing bowl
Beat the 3 eggs and add to salmon
Add mayo, onion, dill weed and lemon juice and mix well
Add crushed chips and mix well
Place oil in sautee pan and place on medium heat.
While oil is heating, form salmon mixture into patties.
Place patties in pan and cook 3-4 minutes each side, or until browned.
Remove to paper towel lined plate.
Serving Size: Make's 8-1 patty servings
