Hearty and very low-calorie! I serve over a roasted sweet potato. Hearty and very low-calorie! I serve over a roasted sweet potato.
Number of Servings: 8


    1 lb ground turkey
    1 head caulifower, chopped
    2 zucchini, chopped
    1 onion, chopped
    2 carrots, chopped
    3 cloves garlic, minced
    1 green pepper, chopped
    3 cups tomato sauce (I used Muir Glen organic chunky)
    1 pack taco seasoning (or chili seasoning- whatever you have on hand)


Serve over a sweet potato. Top with sour cream and/or shredded cheese if desired. (Calories not calculated in for potato or toppings).


Brown turkey in it's own juices. Set aside. Warm chopped vegetables with garlic, just to soften a bit and combine flavors. Add seasoning to vegetables. Put turkey and seasoned vegetables into slow cooker. Stir in tomato sauce. Cook on medium for 6 hours. Enjoy!
