This is a great salad mixture to perch atop your favorite mixed greens for light summer meal. This is a great salad mixture to perch atop your favorite mixed greens for light summer meal.
Number of Servings: 6


    1 12 oz jar marinated artichoke hearts cut into 1/2" pieces
    2 cups grape tomatoes 1/2ed
    1 med. cucumber, peeled and seeded, cut into 1/2" pieces
    1/4 cup crumbled feta
    1 16 oz pkg Medium Cooked Shrimp, thawed/squeeze out excess water

    Lite Dressing Ingredients
    1 oz crumbled feta
    3 TBSP red wine vinegar
    1/2 pkt truvia
    1 tsp olive oil
    1 small garlic clove
    1/4 tsp dijon mustard
    1/2 tsp dried oregano
    1/4 tsp salt
    1/8 tsp black pepper


Making this in advance will allow the flavors to blend nicely. Feel free to substitute beef, chicken, scallops or crabmeat for the shrimp.


For the Light Dressing
Combine all ingredients in a blender and pulse till well mixed.

For the Topping
Cut Artichokes, grape tomatoes, oven dried tomatoes and cucumbers. Add feta and shrimp. Mix well.
Add the Lite Greek Dressing, mix well

Serve 1/2 atop 2 oz of your favorite mixed greens (not calculated in recipe, but usually is about 20 calories for 2 oz.
